Barista’s and lovers of specialty coffee are becoming more and more interested in the science behind the brewing of coffee and how this science can play a role in getting the best result in the cup. Filter Coffee Path 2 workshop is designed to further explore  the core skills and equipment required to produce great filtered coffee. During this structured workshop we will test filter brewing recipes and methods with a variety of experiments exploring how to get the best flavour into your daily filter. Together we will explore: The 3 important factors to manage for brewing filtered coffee. Introducing flavour into filtered coffee. Exploring the relationship between strength and extraction and the impact and value of brew ratios.  Using the refractometer to analytically measure strength (TDS %) and extraction yield (PE%) to assess if we are working with ideal numbers and taste profile, in reference to a published brewing chart. DELIVERY Delivered by a member of our Training team who have collectively had success in state and national coffee competitions.  We max our Filter Path 2 workshop to 4 people to encourage trying, testing, exploring and tasting! REGISTRATION & PAYMENT We have no minimum numbers for any of our workshops, once you have registered be assured that the workshop will go ahead. We offer an option to pay in instalments or in one hit to secure your spot. Payment must be finalised prior to workshop date.

Evolution: Torres Strait Islander Masks


Evolution: Torres Strait Masks presents a rich history of mask making in the Torres Strait. The exhibition highlights the significance of masks in Torres Strait Islander ceremonies and culture and their evolution to the present day through the commission works of eight artists from the Torres Strait and Northern Peninsula area. Masks from Zenadh Kes are striking objects of deep ritual and historical significance. While rooted in ancient protocols and spirituality, masks and mask making are celebrated today as expressions of artistic and cultural revival. Evolution: Torres Strait Masks provides audiences with a special insight into a revived practice that was once unmatched by all cultures of the world as well as tools, techniques and materials such bones, tusks, feathers, shells, nuts, seeds and natural tree fiber. Evolution: Torres Strait Masks was developed by the National Museum of Australia in partnership with the Gab Titui Cultural Centreand its parent body, the Torres Strait Regional Authority.

Grand Master Dr Issam was deeply aware of his destiny and path in life from a very young age.  His grandfather, Gilbrain, taught him from a very young age.  He told him about understanding the power of thought, about listening to his inner voice and about showing compassion towards others.  With his grandfather’s encouragement and guidance, Grand Master Dr Issam began to meditate when he was eight. His first vision took place when he was thirteen.  He saw Lebanon, his homeland, at war.  Three months later, his vision became a reality as civil war broke out.  It soon became a dangerous place for a young boy growing up.  Walking in the street, he was captured by a rebel group who believed he was working in opposition to them.  Grand Master Dr Issam suffered imprisonment, hunger and torture with solitary confinement and starvation a common occurrence. Soon after his experiences in jail, an elderly man named George visited Grand Master Dr Issam and his grandfather Gilbrain.  George informed them about the next part of Grand Master Dr Issam’s life journey – he would spend time at a Mystery School in Tibet.  Whole attending the Tibetan Mystery School (over three years), Grand Master Dr Issam learned to meditate deeply to reach a ‘bliss’ state, to heal others through Ajna Healing, to see and read auras clearly and effortlessly and to astral travel. After the Mystery School, Grand Master Dr Issam spent some time in the Great Pyramid of Cheops in Egypt, Le Chateau in France and with different Masters throughout Europe.  Since arriving in Australia – over thirty years ago – Grand Master Dr Issam has been teaching others to find their life purpose.  He is totally immersed in supporting individuals to find their own inner power.
